This results in a stunning roasting joint that is a fabulous combination of succulent sweetness and delicate saltiness.

Serves, min. 4.

Cooking guide:Remove from fridge 30 mins before cooking. Pre heat oven to 190°C/170°C fan/gas mark 5. Remove all packaging, discard any juice in the bag and place rack in a roasting tray lined with foil. Cook uncovered for 1 hour 15 mins until the centre of the rack reaches 72°C to ensure the product is cooked through.

Keep refrigerated between 0-5°C. Once open consume within 24 hours. Suitable for freezing.
