We rub selected British pork belly with salt and sugar, add a little black pepper, juniper, bay leaf and other herbs; then, and this is the best bit, leave the meat for a full 48 hours to absorb all the deliciousness. We cook the pork slowly for 14 hours or so to guarantee maximum tenderness. Serve hot or cold, with a nice buttery mash or salad. In fact serve it with anything that takes your fancy. Our Belly Pork Confit is one of Sarah's personal creations, and quite possible her finest.

Heating Guide:Belly Pork Confit is already cooked and can be eaten cold but to get the best from it we recommend that you warm it through in a frying pan over a medium heat until warm throughout. There is no need to add oil or lard to the pan.

Keep refrigerated between 0-5°C. Once open consume within 3 days. Suitable for freezing.

Absolutely delicious, melt in the mouth meat. Used it to make the 'pork confit with pears & bolotti beans' recipe which was very well received.

Half of the pork belly sliced and heated for a short time in my little halogen oven made an excellent and indulgent Christmas lunch for one with some bread sauce, roast parsnips and sprouts. Little preparation and hardly any washing up, which is essential if you're on your own and an extremely unenthusiastic cook. Will definitely be buying again next year.

This is truly gorgeous, I had it once and bought it again because I enjoyed it so much. It has so much flavour, once pan fried, and is lovely and soft. It doesn't have too much fat in it either, just the right amount to keep it moist. I start salivating just thinking about eating this, YUM!!

This was moist and very flavourful. I browned the outer layer of fat in a frying pan on top of the stove, then warmed it through in the over. Excellent product.

This was a special treat, warmed it through in a dry non-stick pan and served with salad and my late Mum's potato salad recipe, great taste and such tender meat.

We weren't sure what to expect with this but it was delicious. The pork is already cooked and just needed to be warmed through for about 7-8 minutes in a frying pan on a low heat. It made a very substantial dinner for two greedy people but could easily feed four.
