Lemon & Poppyseed Pancakes with Lemon Curd & Raspberries

Ingredients
  • x6 lemon & poppyseed pancakes
  • 4 tbsp lemon curd
  • 300g yoghurt
  • 300g raspberries
Directions
  • Step 1Toast or microwave pancakes until they are warmed through.
  • Step 2 Stir the lemon curd into the yoghurt lightly to achieve a marbling effect. The yoghurt will balance out the sweetness of the lemon curd.
  • Step 3 Dollop the lemon curd mix onto each pancake and garnish with a handful of raspberries.
