These Cotswold White British Chickens are reared in Wiltshire, 3 miles from Stonehenge.

The superb flavour comes from not only the breed but also the fact they are free range, slow grown (so twice the age of your typical supermarket chicken) and are fed on a diet of natural oats, maize and apples.

We highly recommend them.

Pre-heat oven to 180°C. Season with salt and pepper. Place the bird in a large roasting tin, loosely cover with silver foil. Roast the bird for 1hour 40 minutes basting occasionally with the pan juices. 10 minutes before the end, remove the silver foil and continue to cook until the skin becomes crispy. Ensure that the centre of the bird is piping hot and that the juices run clear from the back of the legs. A minimum core temperature of 72ºc is recommended. Allow the bird to rest for 15 minutes before carving.

Store at <4°C, once opened use within a day.

Flavoursome and carved well but will reduce cooking times with next one. It would be good to have your suggested roasting temperature and timings.
