Remove from the fridge 20 mins before cooking. Remove all packing. Pre-heat oven to 190°C/Fan 180°C/Gas Mk 5.Place into roasting tin and add seasoning to taste. Cover with foil and roast for 60 mins. Remove the foil and continue to roast for a further 20 mins until a golden brown. Ensure the juices in the thickest part of the bird run clear and reaches 72°C. Allow to rest at room temperature before serving. Enjoy!
