Cooking Guide for a slow roast:Remove Pork from wrapping, ideally the day before, and keep in fridge. Remove from fridge 20 minutes before cooking. Preheat oven to 230°C/210°C fan/Gas 10. Rub the rind generously with sea salt, and roast on high heat for 30 minutes. Reduce oven to 150°C/130°C fan/Gas 2 and cook for a further 3 hours . Once cooked cover loosely and allow to rest in a warm place for 30 mins. Ensure that the product is cook juices should be running clear.

Keep refrigerated below 5oC, once opened eat within 24 hours
