We rub selected British pork belly with salt and sugar, add a little black pepper, juniper, bay leaf and other herbs; then, and this is the best bit, leave the meat for a full 48 hours to absorb all the deliciousness. We cook the pork slowly for 14 hours or so to guarantee maximum tenderness. Serve hot or cold, with a nice buttery mash or salad. In fact serve it with anything that takes your fancy. Our Belly Pork Confit is one of Sarah's personal creations, and quite possible her finest.

Heating Guide:Belly Pork Confit is already cooked and can be eaten cold but to get the best from it we recommend that you warm it through in a frying pan over a medium heat until warm throughout. There is no need to add oil or lard to the pan.

Keep refrigerated between 0-5°C. Once open consume within 3 days. Suitable for freezing.
