Remove Pork from wrapping, ideally the day before, and keep in fridge. Remove from fridge 20 minutes before cooking. Preheat oven to 220°C/200°C fan/Gas 7. Rub the rind generously with sea salt, and roast on high heat for 30 minutes. Reduce oven to 180°C/160°C fan/Gas 4 and cook for 30 minutes per 500g, plus 30 minutes, to allow crackling to go crunchy. Once cooked cover loosely and allow to rest in a warm place for 20 mins.

Keep refrigerated <5°C, once opened use within 24 hours. Suitable for freezing -use within 1 month.
