Produced from the finest English lamb, naturally reared with the highest regard to diet and welfare. Cut from the prime part of the loin, our butchers trim this to avoid any waste and to maximise the visual appeal. The fat plays a crucial role in keeping it moist and succulent when cooked (re recommend browning it quickly in a pan, then roast until still just pink in the middle), and also in carrying the wonderful flavour.
