Leave the fillets at room temperature for 20 minutes before cooking. To Shallow Fry: Add a little oil to a pan and heat to medium. Season the chops with sea salt and freshly ground black pepper and cook for 8-10 minutes, basting frequently and turning occasionally. To Grill: Preheat grill. Season the chops with sea salt and freshly ground black pepper and place under the grill for 5-6 minutes, basting frequently; turn and repeat. Once cooked cover the fillets, keep warm and allow to rest for 2 mins.
