Looking for something very special? This wonderful ham will definitely oblige and the bone has been removed for easier carving. [more...]

This flavoursome ham is a direct descendent of the historic Bradenham Ham, which originated in the kitchens of Bradenham Manor, Buckinghamshire in 1781. Rumour has it that the butler fell out with his employer, Lord Bradenham, and moved to Wiltshire, taking the recipe with him. Thus the Bradenham Ham Company was born, and continued to manufacture delicious hams for almost 100 years. Sadly, the company’s fortunes waned, and the recipe was passed from business to business until production ceased. Though we weren’t able to acquire the name, we did manage to recreate the recipe, and so the Shropshire Black was born.

Like the York, this is a dry cured ham with a robust flavour and firm texture that develops during several months of maturation. What sets it apart, however, and gives the ham its distinctive black rind, is a fortnight spent wallowing in a special marinade of molasses, juniper berries and spices. This impressively full flavoured ham remains a favourite of connoisseurs seeking the ultimate taste experience.

All of the wonderful flavour and texture of the “bone-in” Shropshire Black Ham, but you will find it easier to carve because we have removed the bone.

We normally have a whole York ham but wanting to avoid waste we tried this one. Very disappointed. It was not special in flavour and the ham seemed to be the back end of the joint with a lot of tough fatty areas and the ham itself very tough also. In the picture it shows the ham is in two sections but ours was multiple sections with the paler more tender area in the minority. At £60 this was very poor value and I would have been happier with a supermarket gammon cooked at home for a quarter of the price!

Fantastic firm and dense ham, glorious taste and very worth the price. Ensure you have a very good carving knife or keep sharpening the ones you have as this is a Solid ham, dry cures not watery .

My preference is for The York but some of my family prefer the Shropshire. They are both a different experience to all other hams

Disappointing. Thick covering of fat and not nearly as good flavour as the Wiltshire smoked.

Sadly too salty and not the complexity of flavours I was hoping for that were described on the website. I'll probably try Dukeshill again to see whether this was a one off.

Slightly dry, (which we prefer) really lean. Slightly sweet flavour with a hint of spice. We had the York ham last year and thoroughly enjoyed it but this is even better.

I have written my report above, you see that we were not entirely deighted with the experience, for practical reasons.
