The Shropshire Black is unique. Made exclusively by Dukeshill to a recipe created by Lord Bradenham back in 1781, this ham will appeal to those who are looking for something really special.

Like the York, this is a dry cured ham. What makes it different, however, and lends the uncooked ham its distinctive black rind, is a fortnight wallowing in a special marinade of molasses, juniper and spices. The hams are then left to mature for three months, during which time they develop their robust and distinctive flavour.

The uncooked ham comes with instructions on how to cook it. Please note that due to the saltiness of the dry curing process the ham will require a minimum of 24 hours soaking prior to cooking, so do request delivery in plenty of time if you require the ham for a special occasion.

The optional cooking bag is ideal to use if you haven't got a cooking vessel big enough to fit the ham in. Instructions for use are in the booklet enclosed.

Remove packaging. Prior to cooking the ham should be soaked in cold water for 24 -48 hours, changing the water once or twice. The length of soaking will affect the final saltiness of the meat. To Boil: Place ham in a large saucepan and cover with cold water, bring slowly to the boil and simmer for approximately 25 minutes per pound (500g). Unless you want to serve it hot, let it cool in the boiling water. To Bake: We recommend simmering for 20 minutes per pound, followed by baking at 190°C/170°C (fan)/gas mk 5.

Keep refrigerated between 0-5°C. Suitable for freezing.

We cooked the Shropshire Ham as recommended. As we didn't have a large enough cooking container we baked the ham in the bag provided. The Ham was eaten hot. It was moist and had a great sweet flavour. The joint provided more than enough for several meals and a pie!!

This was our second Shropshire black half leg - bought for a Boxing Day party it fed 12 easily (inc seconds and thirds) - and is now v tasty snack food and will finally make amazing soup. Fun to prepare and great value too.

My half bone-in Shropshire Black Ham (uncooked) arrived on the date arranged and at an appropriate time. The product was very well presented in the container box. I was so happy and excited about how it had been packed and the product itself looked fantastic. The little booklet from Dukeshill (The finest Ham) has very useful information and I am pleased to have it. I am roasting my ham today and I went back online to check on suggestions to glaze. I will be able to feedback when I have tasted my ham but so far so good. I intend to buy this product again.
