Not a cut to be rushed, this special cut just gets better the longer and slower it's cooked!This superlative beef is exclusively sourced from carefully selected British farms, and slowly matured to ensure that the flavour and texture are second to none.

Allow thawed Oxtail to come to room temperature before cooking. Preheat oven to 140°C-160°C/275-325°F/Gas 1-3. Add a little oil to a frying pan and brown oxtail on all sides for 5 minutes. Transfer to a lidded casserole. Brown vegetables of choice (such as onions, carrots and celery) in the same pan, and transfer them to the casserole with some thyme and bayleaf. Deglaze the pan with wine or water, add to the casserole and cover meat with more wine or stock, Bring to a gentle simmer on the hob and then transfer to the oven and allow to cook slowly for at least 2-3 hours, or until tender. Test for tenderness and season to taste before serving.

Keep refrigerated below 5°C. Suitable for freezing, freeze on day of purchase. Once defrosted consume within 24hrs.
