Peach & Brandy Syllabub

This pudding is simplicity itself. Prepared in minutes it remains one of our favourite puddings, although a little elbow grease is required!

  • 475g jar peaches, drained but reserve strained juice
  • 2 eggs, plus 2 egg yolks
  • 50g caster sugar
  • reserved brandy syrup juice from jar (approx. 100ml)
  • Step 1 Begin by draining the juice from the jar of peaches being sure to reserve the delicious juices for the syllabub part.
  • Step 2 Divide the peaches between four bowls.
  • Step 3 Over a pan of simmering water whisk the eggs, egg yolks, sugar and reserved juice continuously, until light and fluffy and ribbons form as you whisk. This will take approximately 10-15 minutes.
  • Step 4 Pour the syllabub over the peaches and serve immediately.
