The Unique Shropshire Black Ham - a distinctive & robust flavour. Dry cured and marinated in a mix of spices and molasses it has a subtle sweetness.

The Shropshire Black is unique. Made exclusively by Dukeshill to a recipe created by Lord Bradenham back in 1781, this ham will appeal to those who are looking for something really special.

Like the York, this is a dry cured ham. What makes it different, however, and lends the uncooked ham its distinctive black rind, is a fortnight wallowing in a special marinade of molasses, juniper and spices. The hams are then left to mature for three months, during which time they develop their robust and distinctive flavour.

The uncooked ham comes with instructions on how to cook it. Please note that due to the saltiness of the dry curing process the ham will require a minimum of 24 hours soaking prior to cooking, so do request delivery in plenty of time if you require the ham for a special occasion.

The optional cooking bag is ideal to use if you haven't got a cooking vessel big enough to fit the ham in. Instructions for use are in the booklet enclosed.
